Production technique:
By hand, whit grapes selection. Cooling of the grapes, soft pressing of grapes; natural must decantingin stainless steel tank and alcoholic fermentation in autoclave at 14/15°C. Fining on the yeasts lees for 12 monthsand further refining in bottle for two months;
Organoleptic characteristics:
Straw yellow with greenish reflections. Perlage numerous persistent and fine grain. The complex, elegant and intense nose reveals hints of white flowers, fresh fruit and pleasant mineral notes. The effervescence give freshness and sapidity. Intense and persistent flavours. Good persistence, structure and acidity. Fine, soft and balanced;
Food pairing:
The sparkling Falanghina is an excellent aperitif. It is ideally combined with Mediterranean dishes such as antipasti, rice and pasta with seafood. Among the dishes it is recommended with grilled or fried fish or with delicate sauces, crustaceans. Use a flute glass to encourage to spread its effervescence. Serving temperature 8-10°C.
